Hawaiian Barbeque Chicken Pizza

Dough:
I used Heidi's pizza dough recipe for the dough. Makes 2 pizzas.

Toppings:
Chicken
Thinly sliced red onion
3-5 garlic cloves diced
Pineapple
Mozarella

Sauce:

One can of tomato sauce and about that much barbeque sauce seasoned to taste with Italian seasonings.

(I just put frozen chicken breasts in a covered frying pan with some pam on medium heat seasoned with salt and pepper)

Note: We discovered this pizza while having a pizza contest. The dough made two pizzas so we each made up toppings for one pizza to see which tasted better. This would be a fun idea for FHE or for getting together with other couples.

Easy Parmesan Chicken

2 C. crushed ritz crackers
3 T. parmesan cheese
2 t. garlic salt
8 chicken breasts
1/4 C. melted butter

Combine crackers, cheese, and garlic salt. Dip each chicken in water then in crumb mixture. Arrange in greased 9 x 13 pan. Drizzle with melted butter. Bake at 350 for 45 min.

Personal Note: I cut the recipe in half since it is just James and I. Also, I accidentally dipped the chicken in butter instead of water. A little more fatty, but good. I think I put a little more garlic salt in then needed, so it was a little salty. If you want more garlic James suggested using the garlic powder....but who knows. We enjoyed it.

Spaghetti Squash With Vegetables & Mozzarella

1 spaghetti squash, cooked (I cut it in half and bake it the day before. The next day I scoop out the inside to use.)
1 lg. yellow onion, diced
1 green bell pepper, chopped
1 red bell pepper, chopped
2 T olive oil
1 can (28 oz.) crushed tomatoes
3-5 cloves garlic, minced
1 tsp. basil
1/2 tsp. oregano
1/2 tsp. crushed red pepper (optional)
1 C grated mozzarella cheese
1/2 C grated Parmesan cheese

Serves 6-8

Preheat oven to 375 F. Mix the cheese together, set aside.

Heat olive oil in a skillet and add the onion, pepper and garlic. Sauté over medium heat for about 5 minutes. Add crushed tomatoes, basil, and crushed red pepper (if using). Simmer uncovered for about 15 minutes. Mix squash well with the cooked vegetables and put half in the bottom of a large (13 x 9 inch) baking dish. Top with half the cheese mixture, followed by the other half of the squash mixture, then the rest of the cheese. Bake for 30 minutes or until cheese is bubbly and slightly browned. Let cool 10-15 minutes before serving.
