Pumpkin Cranberry Apple Baked Oatmeal

Pumpkin Cranberry Apple Baked Oatmeal

Pumpkin Cranberry Apple Baked Oatmeal

  • 2 cups old fashioned oats
  • 1/3 cup wheat germ
  • 1/3 cup dark brown sugar, packed
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup dried cranberries
  • 1 1/2 cups vanilla soy milk
  • 1/2 cup pumpkin puree
  • 1 1/2 tablespoons unsalted butter, melted
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup apple, chopped (I left the skins on)
  • 1 cup walnuts, chopped

Preheat the oven to 375°F.  Spray a baking dish (I used my small glass baking dish – about 7×11 inches) with cooking spray and set aside.

In a large mixing bowl, combine the oats, wheat germ, brown sugar, cinnamon, salt, baking powder, and cranberries.  In a separate bowl, combine the soy milk, pumpkin puree, melted butter, egg, and vanilla, whisking until the mixture is smooth.

Pour the wet mixture into the dry mixture, and stir to combine all of the ingredients.  Add the apple and combine with the wet oatmeal mixture.  Spread the oatmeal into the baking dish, and sprinkle with walnuts.

Bake for about 20 minutes, until the oatmeal has set and the top is golden. Serve warm, topped with additional soy milk, if desired.

Magic Breadsticks

1 1/2 c. warm (105-115 degrees) water
1 Tbsp. sugar
1 Tbsp. yeast
1/2 tsp. salt
3-4 1/2 c. flour
In a large bowl (the bowl of your mixer, if you have one), combine water, sugar, and yeast. Let stand for 10 minutes or until yeast is bubbly.
Add salt and stir. Add 1 1/2 c. flour and mix well. Gradually add more flour (usually between 3-4 cups, depending on your elevation and your humidity) until dough starts to pull away from the sides of the bowl and it barely sticks to your finger.
Spray a glass or metal bowl with cooking spray and place dough in the bowl.
Cover and allow to rise for 45 minutes or until doubled in bulk.
Remove from bowl and place on a lightly-floured surface. Spray a baking sheet with cooking spray. Roll into a rectangle and cut into 12 strips with a pizza cutter.

Roll out each piece of dough into a snake and then drape over your forefinger and twist the dough. Place on baking sheet and repeat with remaining 11 pieces of dough. Try to space them evenly, but it’s okay if they’re close; pulling apart hot bread is one of life’s greatest pleasures!
Cover pan and allow dough to rise for another 30 minutes.

When there’s about 15 minutes to go, preheat your oven to 425. When done rising, bake for 10-12 minutes or until golden brown. Rub some butter on top of the breadsticks (just put a ziploc bag on your hand, grab some softened butter, and have at it) and sprinkle with the powdery Parmesan cheese in a can and garlic salt.
Or you could sprinkle them with cinnamon sugar. I did that once. It was awesome.

Wisconsin Cauliflower Soup

Tastes pretty close to the Zupas goodness!  And even Mike will eat this recipe, so this soup is a major win at our house.

2 tablespoon butter or margarine
1 medium onion, chopped
1/4 cup all-purpose flour
1/2 teaspoon salt
2 cups milk**
1 1/2 cups water**
1 can (13 3/4 to 14 1/2 ounces) chicken broth
1 head (2 1/2 pounds) cauliflower, cut into 1-inch chunks
1 teaspoon Dijon mustard
1 cup sharp cheddar cheese, shredded
1 cup Pepper Jack cheese, shredded

**Can substitute 1 can {12 oz} evaporated milk and 2 cups water for the 2 cups milk and 1 1/2 cups water.

In a large saucepan, melt margarine or butter over medium heat. Add onion and cook until golden, about 10 minutes, stirring occasionally. Whisk in flour and salt. Gradually stir in milk, chicken broth, and water.

Add cauliflower and heat to boiling over high heat. Reduce heat to low; cover and simmer until cauliflower is tender, about 15 minutes.

In blender (with center part of blender cover removed to allow steam to escape), blend cauliflower mixture at low speed in small batches until very smooth. {Don't let this step deter you from making the soup! Blending it is really easy and so worth the extra 3 minutes. The most annoying part are the added dishes!}
Return cauliflower mixture to saucepan; heat over medium heat until hot, stirring occasionally. Remove saucepan from heat; stir in mustard and 1 1/2 cups cheese until melted and smooth. Serve soup with remaining cheese as a garnish.  (I sometimes add bacon on top as well.  Everything is better with bacon).

Cheesy Vegetable Chowder

2 Tablespoons butter
1/2 cup chopped onion
1 cup finely chopped carrot
1 stalk celery, finely chopped
1 Tablespoon minced garlic
4 cups chicken broth
2 large baking potatoes, peeled and chopped (I usually add more)
1 Tablespoon flour
1/2 cup water
2/3 cup milk
2 cups chopped broccoli
2 heaping cups shredded cheddar cheese

Melt the butter in a large soup pot.  Add onions, carrots, and celery and saute over medium heat until tender.  Add garlic and cook 1 or 2 additional minutes.  Add chicken broth and potatoes, bring to a boil, and cook until potatoes are tender.  Mix flour with water, add, and simmer until soup is slightly thickened.  Add milk and broccoli and cook until broccoli is just tender and soup is heated through.  Stir in cheese, allow to melt, and serve.

Curried Butternut Squash Soup

2 lbs frozen butternut squash
1 T butter
2 c chopped peeled Granny Smith apples
(¾ lb)1 ½ cups finely chopped onion
½ cup thinly sliced celery
1 bay leaf
2 tsp curry powder
1 garlic clove, minced
3 (14.5 ounce) cans chicken broth
1/8 tsp salt
½ cup brown sugar (optional, unless you're me in which case it's not really optional.)

Melt butter in a large pot over medium-high heat.  Add apple, onion, celery and bay leaf.  Sautee for 10 minutes.  Stir in curry powder and garlic.  Cook 1 minute more stirring constantly.  Add broth, salt, and squash (and brown sugar, if you want it a little sweeter).
Reduce heat to medium-low and simmer, uncovered, for 20-30 minutes.  Discard bay leaf.  Either mash mixture for more lumpy soup, or puree for smooth soup.
